π RIB (Base price / hg): The front part of the loin with the L-shaped bone. More marbling and flavour, for true connoisseurs.
π FLORENTINE (+ β¬ 0.50 / hg): The classic T-bone cut. It features sirloin and tenderloin, the most tender part.
π PORTERHOUSE (+ β¬ 1 / hg): A Florentine steak with a particularly generous portion of fillet.

All steaks are weighed bone-in, and the minimum cut varies based on the size of the loin.
The minimum portion per person is 6-7 hg.
For Wagyu, a portion of 2 hg per person is recommended, as it is boneless and contains a lot of fat.

All steaks are aged in-house. Our chefs determine the cooking time based on the breed to maximize flavor. And remember: a medical certificate is required for well-done meat, seriously!
